TDS: You are a big traveler, how does this reflect on your food?TDS: What makes a good chef?A.H.: Initially, I think the most important thing is that a good chef has to have a good palate to understand and to have a proper appreciation of good flavors. I mean, some chefs are not particularly sophisticated; so, you have a lot of good chefs but what makes an outstanding chef is somebody who has incredible technique as well as an amazing palate. TDS: What do you think makes a good restaurant?A.H.: A good restaurant has to combine an atmosphere, although I am totally against loud and busy. I also love street food, and that is a different thing altogether.TDS: What do you think of people's attempts to modernize Lebanese cuisine?
